چکیده
In the current study, probiotic Lacticaseibacillus paracasei KC39 was immobilized on wheat bran as a carrier. The synbiotic biocatalyst freeze-dried and used an adjunct during production of functional soft white cheese. Free Lc. cells control cheese with commercial starter were for comparison. addition to fiber content 1.12%, made using showed higher cell viabilities in gastric intestinal phases well enhanced microstructure favorable sensory characteristics. presented immobilization method could be applied other food products stabilized delivery both probiotics dietary fibers.

Prebiotic Wheat Bran Fractions Induce Specific Microbiota Changes
Wheat bran fibers are considered beneficial to human health through their impact on gut microbiota composition and activity. Here, we assessed the prebiotic potential of selected bran fractions by performing a series of fecal slurry anaerobic fermentation experiments using aleurone as well as total, ultrafine, and soluble wheat bran (swb) as carbon sources. By combining amplicon-based community...

An erythromycin-resistant strain of probiotic Lactobacillus paracasei ssp. paracasei LBC-1 (LBC-1e) was added to part-skim Mozzarella cheese in alginate-microencapsulated or free form at a level of 10(8) and 10(7)cfu/g, respectively. Survival of LBC-1e and total lactic acid bacteria (LAB) was investigated through the pasta filata process of cheese making (in which the cheese curd was heated to ...

To survey the overall fungal contamination and toxicological potential of isolated fungi, a mycological investigation of 56 samples of wheat bran was carried out during March-June 2004 in Slovakia. Despite of low values of water activity found in the samples reaching an average of 0.54, the individual samples were contaminated with fungi in a range from 1.82 x 10(1) - 3.42 x 10(4) colonies form...
